Here is what you will need:
- 6 eggs
- water
- vinegar
- salt (optional)
- pepper (I use white; Mom uses black)
- mayo (NOT Miracle Whip)
- mustard
Ingredients are IMPORTANT! Hellmann's mayo doesn't separate and Guilden's is really the best! (My Mom says so!)
1. Boil your eggs
2. Peel your eggs (I recommend peeling directly after taking them off the heat...run them under cold water while you peel them and it comes off way easier)
Sometimes no matter what you do they will not peel easily. There is a whole "thing" about a "right way" to peel an egg but just do your own thing
3. Cut eggs in half lengthwise and pop out the yolk!
My Mom always mixes the filling by hand in a bowl. You can do it this way OR I recommend placing them in a ziplock bag. You can get all the lumps out and it WAY easier to clean up!
4. Once your eggs are all cut and the yolks are all out. Begin to smash them with a fork.
If you opt for using the bag then just wait until all your ingredients are added before you start to smash up the eggs.
5. Add in your pepper (start with 1/2 tsp and go from there...all the ingredients are to taste)
6. Add in 2 heaping tbls mayo and one tbl of mustard (feel free to add as much or as little as you want)
7. Add in your vinegar (start with 2-3 tbls and work your way to more...taste as you go!)
8. Now smash away! Get out as many of the lumps and bumps as you can.
9. Begin spooning your filling into your egg shells
10. Sprinkle with Paprika and EAT EAT EAT!
